Quinoa Avocado Salad


I made this once on a whim for a dinner party and it turned out to be the biggest hit! It's simple and has great fresh flavors. The homemade dressing compliments everything really well. Plus, it's vegan! Thank you to Feel Good Foodie for the original recipe!

INGREDIENTS
  • 1 cup uncooked quinoa
  • 1 cup grape tomatoes halved
  • 1 large cucumber diced
  • 1/4 cup red onion finely chopped
  • 2 large ripe avocados chopped
  • 1/4 cup chopped cilantro
DRESSING:
  • 1/4 cup olive oil
  • 1 Tbsp red wine vinegar
  • 1 Tbsp lime juice
  • 1 tsp Dijon mustard
  • 1 garlic clove minced
  • 1/2 tsp salt
INSTRUCTIONS
  1. Cook the quinoa, let it cool down then refrigerate
  2. Whisk all the dressing ingredients together
  3. Cut up the tomatoes, cucumber, red onion and cilantro and place in a bowl. 
  4. Once I'm ready to serve is when I'll combine everything together leaving the avocados for the last bit to remain as fresh a possible. I leave the dressing on the side in a separate bottle so friends can decide how much they want. Some prefer no dressing at all because the salad is that good!
