Cilantro Lime Salmon Bowls

Not only is this recipe a fairly quick and easy assembly of ingredients, but it tastes clean, healthy and surprises you with a subtle punch of flavor. This bowl recipe from Delish will fill you up quickly and can be used for meal prep throughout the week! I catered the recipe to more of what was already in my kitchen, but that's the beauty of these assembly type dishes... they are customizable and can be created from scratch! You are the chef, so you get to decide!



INGREDIENTS

3 red peppers, sliced into strips
2/3 c olive oil,
2 limes (1st for marinade, 2nd for serving)
1 lemon
2 tbsp chopped cilantro
2 tsp honey
1 garlic clove, minced
a pinch of chili powder
4 salmon filets
2 c cooked brown rice
1 avocado, thinly sliced
Lime wedges, for serving
Salt and pepper, added for flavor

DIRECTIONS
  1. Prepare the marinade! Grab and bowl and squeeze the juices of 1 lime and 1 lemon into the bowl. Add the olive oil, cilantro, honey, garlic and chili powder into the bowl and whisk until well blended. You can marinate the filets in a glass baking dish for a few minutes or place in a zip loc bag for up to 12 hours. Make sure to get your salmon swimming in marinade... no pun intended. (If you'd like you can use only half the marinade and save the other half for a sauce at dinner)
  2. Begin to preheat your oven to 400° and prepare a baking sheet with a light layer of olive oil. You should also start cooking your rice!
  3. Cut up your red bell peppers into bite size strips and spread evenly on the baking sheet. Sprinkle some salt and pepper for added flavor and pop it in the oven for 10 minutes.
  4. Once the timer goes off, grab your salmon filets and place them gently on top of the blanket of peppers and put it back in the oven for 15 to 20 minutes until the fish is cooked and peppers are soft.
  5. Rice should be ready to go so now it is time to layer all the food together! Start with rice on the bottom, add the salmon, put in a side of peppers and slice up an avocado to add to the presentation of this beautiful bowl! Don't forget your lime wedge!
