This recipe is almost too easy. You can use up the last of those bananas that are ripening fast to whip up an insanely quick healthy alternative for your morning routine. It only takes about 5 minutes to create and then 8 minutes to bake. I found this recipe through Pinterest via the instagram account @weightlossroutines. I tried finding the original post, but I couldn't even find the account. It's a low calorie option that still kisses your sweet tooth.
INGREDIENTS
• 2 ripe bananas
• 2 eggs
• 1 cup peanut butter
• 2 tsp vanilla
• 2 Tbsp honey
• 1/2 tsp baking powder
• handful of chocolate chips
DIRECTIONS
• Preheat the oven to 400° F
• Use a fork to mash the bananas up in a mixing bowl
• Add the rest of the ingredients in the bowl and stir until very well blended with some chunks
• Spray your muffin tin and scoop the batter into the tin by filling the cup about half way full
• Top off each muffin by placing chocolate chips all over the top for that added sweetness
• Place your muffins in the preheated oven and let them bake for 8 minutes!
