Healthy Meal Prep | Quinoa, Veggie & Sausage Bowls

This is one of the easiest and tastiest meal prep bowls I've made! Eating healthy is honestly really easy. When you combine the right foods and right seasonings, you end up creating a really delicious dish from scratch! I don't know about you, but whenever that happens I feel like a badass.


INGREDIENTS
  • 1 cup of quinoa
  • 3 peppers
  • 1 zucchini
  • 1 package of sausage
  • 2 to 3 cups of broccoli 
  • 3 cloves of garlic
  • Avocado oil
  • Salt
  • Lemon pepper
  • Chili pepper
  • Oregano
  • Garlic powder
DIRECTIONS
  1. Set aside 6 clean glass bowls (4 cup/950 mL size)
  2. Rinse 1 cup of quinoa through cold water and strain. Pour the quinoa and 2 cups of water into a big sauce pan and bring to a boil. Once boiling, turn down to medium heat and cover the pan. 
  3. While the quinoa is simmering, cut up your peppers, zucchini, broccoli and sausage into bite size pieces. Mince the garlic.
  4. Once the quinoa is soft and ready to go, shake in a little lemon pepper and salt over top for some extra flavor
  5. Place a heaping 1/2 cup of quinoa into each glass bowl using up all of the quinoa.
  6. Rinse out that same sauce pan and coat the bottom with avocado oil. Throw the veggies and minced garlic in the pan and do another quick splash of avocado oil on top. Season it with a little oregano and chili pepper and let that cook for 10 minutes. 
  7. Once the veggies start getting browner, add the sausage and cook for another 5 to 10 minutes.
  8. Once all the flavors and everything has been cooking together, take it off the heat and let it cool a little. Pour about 1 cup of your veggie/meat stir fry on top of the quinoa. Now you have 6 meals ready for the week!
