Blueberry Spinach Salad + Lemon Poppyseed Dressing

INGREDIENTS
SALAD>>>
  • 4 oz of fresh baby spinach
  • ⅓ cup of crumbled feta cheese (extra for taste)
  • ¾ cup of fresh ripe blueberries
  • ¼ cup of candied walnuts
DRESSING>>>
  • ¼ cup of freshly squeezed lemon juice
  • 1 Tbsp of minced yellow onion or shallot
  • 2 Tbsp of honey (or sugar)
  • ½ tsp of dijon mustard
  • ¼ tsp of salt
  • ⅛ tsp of black pepper
  • ⅓ cup of avocado oil
  • ½ Tbsp of poppy seeds

DIRECTIONS
  1. Let's make the dressing first. I combined all of the ingredients (lemon juice, yellow onion, honey, dijon mustard, salt, black pepper, avocado oil, poppy seeds) and put it in a small blender. The recipe says that you can also use an immersion blender or food processor. Pulse the ingredients together until it turns into a lighter color and refrigerator after.
  2. Wash your spinach if needed and then combine with feta, blueberries and walnuts in a big mixing bowl. Place about half of the dressing (or less, whatever you want) into the salad and give a quick toss. Remember that you can add or take away whatever you want! Salads don't have rules, you can customize it as much as you'd like.
